What is happening is that while the wheel may be true, the spoke tension is not even all the way around, so when you ride it the spokes get too loose and will break.

a proper shop will de-tension and re-tension all spokes when replacing more than one spoke.

I generally trust anybody who looks like they live in the woods with their bike... It's likely this wheel is on it's way out as my guess is the PO of the bike was a string bean and not a 200lb Clydesdale like myself. As a side note anybody have interest this spring/summer in running Mass'o'nutten or Bryce bike park? I've got an inkling to break my other arm in some epic downhill crash... JK.
