I think it's the fact that the R32-34 Skylines can be modified to be excellent performers relatively easily, and they can be made to excel in many different forms of motorsport. An example of this is the Signal Auto R34
runs 8.9 second 1/4's on Yokohama Advans, and runs near 1 minute-flat lap times at Tsukuba.
Also, each generation of Skyline represents(ed) the technological achievements of the Japanese automotive industry at the time...it's pretty impressive to think that in 1989 you could by a car with electronically controlled/biased AWD, "Super HICAS" 4 wheel steering, and a TT inline 6, among many other things. They were all relatively advanced in comparison to other cars on the market (especially the R32 when it came out) They are automotive technology at it's finest.
I think the allure of the Skyline is its potential for prodigious output coupled with an AWD system that can actually put the power to the ground. The reasons for liking Skylines to me are much the same as the reasons for liking the Supra.
Maybe I don't know enough about the Skyline but it seems to me that the R33 and R34 really didn't introduce anything new that the R32 had, they seemed like refinements. The computer-controlled AWD (ATESSA?) was certainly high tech for the time but the engine didn't strike me as revolutionary. It was strong and well engineered but the same could be said for plenty of turbocharged engines from that era.
However the Skyline is in elite company as one of the few decent awd sports/GT cars in production. The Porsche 911 Turbo is of course number 1, but the Skyline is not too far off in second.

Yes the R33 and R34 were "refinements" on the R32...nothing radically different was added between generations, really just more electronic goodies like LCD dash display in the R34 etc....and more refinement...and weight. The R32 and R34 had the ability to manually switch from AWD to RWD with a switch on the console...the R33's ATTESA system didn't have this feature which didn't go over well with owners. I wouldn't be surprised if the Skyline gained even greater status and popularity from it's role in Japanese manga and videogames too.
I think, in essence, its like the Mustang over here....it may not have been the best performing stock, but its still wildly popular and has a huge fan base and aftermarket support. Anyway, the front end styling has some nice, muscular elements to it but the rear looks sort of disjointed and out of place. True to form, the Skyline remains decidedly brutish and unsexy, not an altogether bad thing I suppose.

Apparently the production model won't bow until 2007 (as a 2008 model). I don't know why all the hype then, that seems kind of silly so early in the game. I know they're trying to let people know that the Skyline will be back but its kind of a cruel tease.
I also kind of wonder how they are going to fit the Skyline under the Infiniti nameplate. I hope they don't weigh it down (any heavier than it already will be) with a bunch of luxo crap.

I to, am curious about this. maybe they'll sell it loaded, but also offer stripped versions under the Nismo nameplate, much like Subaru offers the RA version of the WRX and Mitsu has the RS version of the Evo.
Granted, Suby and Mitsu know that there are rallyists out there who make the demand for those special models possible, but surely Nissan knows that serious skyline enthusiasts will see this car as more than a grand tourer.
