It's almost as if different people have different tastes in food. How bizarre.

I will agree through, a well done filet is kind of pointless.

I usually find 'medium' provides a good mix of "this is cooked" and "oh, it's got flavor and juices!" - I'll do med-rare if I really trust the place to prepare it right, or if the dish demands it. Anything beyond medium just tastes charred usually.

A lot of steak purists feel that this is the only way you should eat a steak. I definitely prefer a sauce-less steak but every now and then a little red wine reduction or bearnaise sauce works for me depending on what else is in the dish

The steak sauce and doneness ridiculing gets under my skin. I eat my steaks medium rare with no sauce, but if you want a well done steak with A-1, wear it out. It's your food, eat it how you want.

As for things I wish I had learned. Guitar or some instrument. I played the trombone in middle school but I gave it up because I hated it. I feel like I would have enjoyed guitar, banjo or mandolin. My co-worker is an accomplished bluegrass mandolin player and it looks like so much fun. I also wish I had more involvement in computer programming or technology in general.

A few skills / pieces of understanding I wish I learned earlier
- car, bike, and home maintenance
- understanding that something is not a bad experience unless you don't learn from it
- enjoying the moment

I'll also echo a few others:
- confidence
- learning not to care what's expected of me and instead follow my passions
- compromising

There are a bunch of things I wish I knew, but now it's more of a battle of whether I'm willing to do it over other things (usually because I don't have time to do it all).

I would say Welding is the biggest one for me, that and I wish I would have grown up or spent more time somehow farming. The people I deal with are more often then not attached to ag in some way and I am slowly leaning all the tractors and cow and crops and all the other things.
