For the price to performance ratio bikes are supreme, no doubt about it. Some race cars can be faster than bikes around road courses (mostly open wheeled cars) but that's because they have 4 contact patches instead of two.
As for the skill involved, racing a bike requires one to pay attention to the additional axes of roll and sometimes pitch as opposed to just yaw in a car. In layman's terms, you can't lay down or high side a car.
