I thought you had a wideband?
If so I'm assuming the afr table is in use...and if you have that set up correctly it should be adjusting the VE table.
Set up the AFR table the way you want it. Stoichemetric at idle and low load low throttle situations...richer at higher throttle, higher load, higher throttle situations. Then adjust the VE table so that there is no wideband correction of it.
Once you have that set up you can start tuning for acceleration.
