I use a GoPro Hero 3+ for video. It has never let me down recording-wise (I have it set to default to video mode) and I have the red light turned on so I can see it blinking in my rearview mirror before I strap in. The picture quality is not great compared to the new cams so I'm exploring my options as well.
I use Race Render to combine my AIM data and video. It's a fairly simple process once you get it down. Can work with other data file types if you use Traqmate or whatever. The video software costs $50 or so and is well worth it.
