You just need to know. Remember that these are forest fire trails first and NOT trails for having fun on and it's easy to figure out what's legal and what isn't. If it's something that causes damage or worsens the trail conditions, it's probably not legal. Most every side trail that has whoops/bumps or hill climbs is off limits.
The way you know is go with someone experienced and listen to what they say.

Unfortunately a lot of this falls on deaf ears for people getting out there their first few times. On recent trips I lead, it was hard to get people to not do stupid stuff and not tear up the land.

Definitely unfortunate. The message will be loud and clear the next time you go out for a day of fun and are greeted by this:
The trail network used to be huge about 10 years ago. It's been slowly and slowly disappearing as people go off-trail and abuse the land. I'm all for a little romp through some puddles, but technically all those mud pits up there are in fact off-trail and illegal.
