You can though. On my S8 when you unlock the phone you have the option to go back to non-Android Auto mode by a button on the lock screen. Then you hit the Android Auto button on your head unit when you're ready to go back. You definitely don't have to unplug it. I think you can also leave Android Auto mode directly from the head unit and then just jump back in again through it.
