I'm not personally gluten intolerant, but wheat screws up my lower GI something fierce. Eating GF is the easiest way to avoid wheat.
Yeah, there's Celiac and then there's "I get gassy when I eat a whole pizza and beer." You probably have a low FODMAP absorption rate, and eating gluten free will help that, but it's got nothing to do with gluten. Lots of them in wheat products.
