The only noticeable difference on a high beat watch will be a smoother sweep of the second hand. Older movements like the one in my '66 Seiko are 18,000bph, I think a lot of modern ones are 21,800 and then the "high beats" are 28k or 36k. A higher frequency will be a few seconds more accurate but I think they also need servicing more often because the balance wheel is being worked harder.
