I know that there are a variety of sportbike racing series. What are all the ones that are in America and Europe. It starts with 125cc and goes to 1000cc? Are the bikes open to be modified at the teams discretion or are there limits?

There are two major club/semi-pro racing organizations in the US. CCS/Formula USA and WERA. I don't follow club bike racing enough to really know a ton about them but I know there are classes for 600's, 750's, 1000's, V-twins, and some 250cc 2-strokes out there. Aprilia has a spec class for their RS250 in Formula USA I believe.

Modifications depend on the class but there is a spectrum of modifications in club racing from mild to probably the equivalent of Improved Touring in SCCA.

As pro racing goes there is AMA Pro Racing in the United States that consists of Superbike (1000 cc, extensive mods), Formula Xtreme (unlimited mods for 600 cc inline-fours, 750 cc v-twins, and I think 1200 cc pushrods), Supersport (1000 cc, mild mods), and Supersport (600 cc, mild mods).

In Europe there are two big superbike series: British Superbike and World Superbike, both for 1-liter v-twins. Both of these are second fiddle to Moto GP. Moto GP has three classes: 125cc, 250cc, and 1000 cc (4-stroke). Moto GP races in Japan, Brazil, South Africa, all over Europe, and hopefully USA next year (Laguna Seca or Barber Motorsports Park).
