They need to be FULLY defrosted 24hrs prior to coming to RJ's (a frozen turkey will usually take 72hrs to defrost) also the should be NO larger than 14.5lbs. Once defrosted (24hrs prior to party) it needs to be patted dry inside AND out. After patting it dry the outside should be liberally rubbed down with SEASALT (NOT Tablesalt). If they have a flavor injector I can add some more steps otherwise I'll take care of that at RJ's. Also I would like the turkeys at RJ's at 5pm (instead of the start time of 6pm) so I can start frying them.

b/c even though they may appear to be defrosted on the outside when you drop a 14lb turkey into 350* hot oil, it usually still finds liquid and will make a BIG mess.
