in your case neither oil would protect better under high heat since they are both 30 weight when at operating temperature. thickness does not necessarily protect better anyway but that is for another thread.
also, you will mostly likely not lose any MPG's until you get into some fairly thick oils like a 10W-40 or 20W-50. some cars are more sensitive than others though.

Nonetheless I'll definitely look into some GC 0w-30 or something similar for the near future.

yes. the worst is at startup before your oil pump builds pressure and your rotating parts are riding on a leftover oil residue from the last time you shut down. that said you can also do damage at operating temp by overheating the oil, running oil that is very old (a 30 weight sheered down to a 20 weight for example) or running low amounts of oil.
you are probably fine, but if you want check out GC, shell rotella-T 5W-40 and even a thicker weight of penzoil platinum are all good, easily available and span a wide range of prices with GC being most expensive and PP being the cheapest. NASIOC has some used oil analysis on these if you search.
