just wanted to bump this up. had a great meal last night that was crazy cheap.

if you like fish, i highly suggest Bluefish. it's in season right now (they "run" up the coast) and it is ridiculously cheap. we hit up the market yesterday and fresh Bluefish was priced under freaking Mullet (a trash fish, much like the trash haircut that bears its namesake), at $1.69 a pound!

Bluefish is darker meat and firm enough to cut as steaks instead of fillets.

take 2 of these:

drizzle half a container of Annie's Naturals Mango Cilantro marinade on it:

throw in a glass dish, marinade while you watch football. come back 2 hrs. later, throw in oven at 350 for 30 minutes.

put a little rice and some salad on the side. eat a solid dinner for under 5 bucks.

Tried the Tuna steak idea tonight. Cooked dinner for emily and myself. Started out with a nice house salad with shredded carrots and baby shrimp and a nice balsamic vinigarette dressing. Then cooked up some crescent rolls with cheddar cheese rolled up in them, sun dried tomato sauce mixed in with wild and brown rice. Took two tuna steaks and coated them in salt, pepper and cilantro before cooking. I'm not a big fan of marinades (neigther is emily) as we both like the actual taste of food more than changing the taste with sauces. Pretty much any meat I cook I just use salt and pepper. Put a little olive oil in a pan and got the pan hot to where the olive oil was just barely smoking and tossed the tuna steaks in. 90 seconds per side and they were perfectly done. After I put them on the plate I threw some sugar snap peas and diced green hot peppers in the skillet along with some wine over medium heat and cooked those up to go on top of the rice.

For dessert I mixed up some fruit dip (just a bar of cream cheese mixed with a bottle of marshmellow cream) and we dipped apples and strawberrys in it. Great finish to a meal.

Everything was enjoyed over a bottle of Pinot Noir. Excellent dinner, thanks for the advice fellas!

just wanted to post up about some cast iron stuff i got for Christmas.

i got a Lodge combo cooker

i've been using them since last week and i can definitely see the appeal of this stuff and why people pass them on as heirlooms. cast iron is great...indestructable, easy to care for, cooks anything and the more you use them the better your food tastes (the metal "seasoning"...although mine are pre-seasoned from the factory).

i made some cornbread last night in the large combo skillet and had to control myself from eating the entire thing. i'll never make it a different way again. i've also made eggs in the small skillet and i can't wait to get some steaks to try out in the griller for some cold weather steak.

We (jenn) got some of the le creuset cast iron cookware as a wedding gift and that stuff is phenomenal. It cooks evenly and retains heat for a long time. Easy to clean and looks nice as well. I've been the beneficiary of many meals thanks to that cast iron stuff.

The grill is actually cast iron. This is more for camping stuff, but I bought a cover for everything, so I think I might set it on my deck too.

Ditched the block and bought a mag blok that matches my cabinets to store/display them

I have all All-Clad LTD pots and pans, Global knife set. I would have loved to get Shuns, but the deal I got on the Globals were outstanding. I like the feel of the Globals better than the Wusthofs and Henckels.

I got Jenn a couple of Kyocera ceramic knives for xmas. Those things cut like a hot knife through butter. I weighed the pros and cons of ceramic knives and pulled the trigger. She seems to like them a lot so hopefully they'll stay sharp as long as advertised and won't break if they should be accidentally dropped.

Now that I'm not a vegetarian anymore I've gotten on a flank steak kick. Very easy recipe and it's really lean.

Buy flank steak
Marinate for 1/2 hour or more (I buy those 30 minute marinades and they work pretty well)
Cook on medium heat on the grill 6 minutes one side, 5 minutes on the other. I add an extra minute on the second side if the cut is especially thick
Slice diagonally perpendicular to the grain and enjoy!

Lee - make your own marinade:

- 4 garlic cloves, minced
- 2 serannos, minced
- 1 large handful of fresh cilantro
- sea salt and fresh ground pepper
- juice of two limes
- juice of two oranges
- 2 tbsp white wine vinegar
- 1/2 cup EVOO

OR

red wine
evoo
paprika
cumin
garlic, minced

I brought my dad back a ceramic knife from Japan and he cut himself pretty good just taking it out of the package. MONDO sharp!

One of these days I'll come up with an excuse to buy one or two for myself.
