I don't think its hippyish to wonder why it got escalated into a knife fight. Its just that the general wisdom says, "don't fight back, give 'em the money". So a lot of people in general do this because they don't wanna get hurt and it seems like the most reasonable thing to do in that situation.
In my mind the reason that the "don't fight" advice is given most often is because the average person doesn't have the means to fight back effectively against aggressors, so on balance its probably safer to surrender.
However the "don't fight back, give 'em the money" approach is not always correct for the situation. If you perceive a threat on your life you need to respond as fast as possible to defuse or neutralize it.
If you see someone even thinking about beginning to do you harm, you don't wait even a millisecond, you engage with intent to main or kill. I'm sure the Marine Corps teaches something similar (they probably don't say anything about 'defusing' a situation though).
