to add my 2c, a stock seat with bar and harnesses is not as safe as a real seat, since the hinges on the stock seat can shear or break, and can force the seat under the bar.
The instructor has every right to refuse getting in the car if the saftey equipment is not equivalent. And a new nasa rule this year says that any rollbarred car must have a seat back brace with a non-fia seat. (although there are situations where this would be counter productive)
personally, I havent really had a problem with stock seat, harnesses, and rollbar. I would prefer a real seat, and it says something to me about the student if they are not willing to spend a couple hundred on a seat for me.
But ive never refused to get in a car because of it, although that may change in the future as I have become much more saftey conscious with all the wrecks and instructor injuries this year.
the worst for me was when i had a guy in a race prepped (shitty bolt in cage) integra, but on my side was the stock seat, stock seatbelt, and no rollbar padding. I got in the car for a session (which i wont do again), and didnt get back in.
