If you want something semi challenging check out the Driving Missions. Kinda cool really, they give you a short stretch of track to make a clean pass on the car ahead of you. In most cases it's the exact same car, or something very similar so not as easy as you might expect. You make substantial contact and you can't use the gas for 5 seconds.
