Since the friend who sold me the Firebird understood I was planning on flipping it, we agreed that if anyone asked, I was effectively selling the car on his behalf since he had no parking/storage space in DC proper. I wouldn't title jump something that was any other sort of scenario.
When I get the Ranger from my uncle's estate, I'll be titling and insuring it before I fly out to WA, and it'll be sold with my name on a Virginia title once I get it home.
Most insurance covers a vehicle purchase for 24 hours without you adding it to your policy, Geico always said it was fine. That said, I like peace of mind on the off chance I get t-boned leaving the seller's place.
