Its how he's shuffling the steering wheel through his hands instead of keeping them at 9 and 3. Its a good method when you're turning sharp enough to cross your hands over one another, but otherwise you want to keep your hands glued to 9 and 3, gives you better awareness to where the front wheels are pointing when shit gets real.
