I concede this may be the case however: If this is in fact true then there's a whole shitload of *bad* Indian food.

And, frankly, if I have to have "good" anything for it to be in the least palatable, I ain't interested. 5 dollars at 5 guys gets me a pretty good burger, while 12 dollars at (for example because I was there last night) Matchbox gets me a pretty fucking good burger.

But you know, I don't need the 12 dollar burger to appreciate the 5 dollar one.

Maybe so, but if you ate nothing but McDonald's hamburgers you might think hamburgers suck. Or if you were a foreigner who only experience American fast food you'd think all American food sucks.

I will say this though, I think a lot of little mom and pop ethnic food restaurants end up not being particularly good because the people who start them were not cooks in the first place. And they don't make much effort to improve from there. Then again, that's probably why they stay small mom and pop places.
