you can downshift multiple gears in a single clutchstroke, it's actually more efficient than doing it gear-by-gear. You just have to adjust the revs that you match with according to the geat your shifting into.
The problem that is being pointed out is that if you drop down to a low enough gear without braking enough, you'll run out of gears and bang into the rev-limiter, which is relatively unpleasant.
