It's pretty simple really. Measure the thickness of the friction material and go and tell them that the pads are fine the way they are. Be sure to point out that you removed the pads to measure it.
If you do it this way, they will know that they're caught but more importantly, they know you have someone that works on cars and they're not going to get any repair money from you. As long as a shop knows they're not going to get money from you, they'll have no incentive to fight you on the brakes.
