I'm not personally gluten intolerant, but wheat screws up my lower GI something fierce. Eating GF is the easiest way to avoid wheat. Yeah, there's Celiac and then there's "I get gassy when I eat a whole pizza and beer." You probably have a low FODMAP absorption rate, and eating gluten free will help that, but it's got nothing to do with gluten. Lots of them in wheat products. My sister always thought she "ate too fast" and had stomache aches after almost every meal. She went through a lot of testing and it wasn't until the 2nd endoscopy they disovered her villi in her intestines had shriveled up and were absorbing nutrients poorly. I had to live somewhat Gluten Free my teenage years since my sister was diagnosed then. The kitchen requires it to be sanitized as any "contamination" through cooking surfaces would hurt my sister. I said "somewhat" because my mom stocked some regular snacks in my room and when I ate out I could order what I wanted. It was tough then since even at Whole Foods there was only a small section Gluten Free. At first my sister hated the "fad to eat gluten free" since most restaurants didnt take it seriously enough. She then came to love it because you can get a lot of good food nowadays because of it. I remember how much of a pain it was in high school for my mom, and I was a teenager that DIDNT pay attention to what I ate, so I cant imagine how bad it was. Edit: If I remember right they diagnosed it for years as acid reflux. Just wanted to add, if you do feel better not eating Gluten, you might want to get tested. It can be "age onset". Since you have been eating gluten your entire life, you may not know how bad you are feeling as our bodies cope. My sister whad from stomache aches because her body was coping. Now her body goes "in shock" in response to gluten since she lives gluten free. It can send her straight to the hospital. Think of it like "alcohol tolerance", the more you do it, the more you can cope; but doesnt mean you are feeling 100%. I sort of just woke up one day, tired of always feeling like shit, and decided to try it to see if I felt better, because my Mom is a diagnosed Celiac and they say it's hereditary. Yeah my Mom wasn't diagnosed until she was in her late-30s, she didn't start experiencing symptoms until her early-30s. They told her for years that she had thyroid issues until she finally found a doctor that thought to test her for Celiacs. You know what really grinds my gears?! - Sully - 01-03-2018 My fiance doesn't absorb her synthetic thyroid medicine while eating gluten and her lactaid pills didn't work 100% of the time before she cut out gluten. Her doctor recommended cutting out gluten after trying massive doses of the thyroid hormone with no success and it worked. I'm not sure what that means but either way, she doesn't eat gluten now. But I hope she never gets that shock thing because I don't do that much to prevent cross contamination. Like I try but I'm not going to keep and eat my bread in a nother room. I will try to use another knife and cutting board and stuff like that. Or prepare her stuff first. One thing that is funny, we both kind of got really bad acid reflux around the time we started dating. Me a little before but now we both have it. And we've both had endoscopy and no answers. She takes nexium like it's candy. 2 in the morning 2 at night plus tums and stuff if she wants to have a drink. I was one day until I finally was able to ween myself off it and now do one zantac and a dose of tums before bed . Idk if any of that could be gluten related but you think hers would get better after cutting it out. I also used to get bad stomach aches as a teen but they seem to have gone away for the most part so I don't think they were gluten related.
