I agree. I've found it makes all the difference if you don't lay it flat. I crumple and fold it up in the pan, then it cooks unevenly more like real bacon does. Then you just have to make sure you don't overcook it and it's pretty tasty. :thumbup:

You want crispy bacon every time? Put bacon on sheet pan. Place parchment paper over top. Place second sheet pan over that and then place your pans in the oven. Crispy as fuck every damn time.

Honestly... Go to whole foods/wegmanns and ask the guy behind the meat counter.. He'll know everything.

But I'm pretty sure center cut bacon just has more fat/a term drummed up by food companies to sell.

I've never seen nice/expensive bacon labeled as center cut.

Center cut bacon is nothing more than thick cut regular bacon with the fat trimmed off of each end and the top (or bottom depending on how you hold your bacon) fat trimmed closer to the meat line. It raises the price per pound quite a bit.

Buy some regular bacon, cut the two fatty ends off to make some gravy, boom, center cut bacon.

It's OK. It reminds of the guy in AZ with some million dollar Cuda. He said it was liberating to drive because it is worth so much more than it would ever cost to fix if damaged. You can't "total" it.
