Re: Show Us Your Meat, and We'll Show You Ours - Apoc - 09-15-2016 One of the reasons I like living in this part of the country is because it's so easy to buy your food from someone you can meet. About every 18 months, the wife and order a hog from a farmer on the Olympic Peninsula. They wait until they get enough orders to have a slaughter day, which can be 2-4 months after order. Once the hog is slaughtered, the smoke shop they partner with calls you for your order. Out of ~90 lbs. of meat, you can choose how much sausage, bacon, chops, etc. you want. They'll also smoke your bacon and ham to specification. A few weeks later we pick it up at the farmer's market a few minutes away. ![]() One of the best things to come from the pigs is the bacon (duh). As you can see in the pics below, it looks, cooks, and tastes so different than anything you buy in the store... and we buy the fancy shit. I have to think this is how people used to eat bacon. My parents are doing something similar, they have two dedicated freezers in the basement and they are buying their meat from local farms in quantities like "quarter cow" "half hog" and "a dozen chickens" now. My wife doesn't like the yolk uncooked, so I break them to even out cooking times. We put a chest freezer in our basement to accommodate. It's turned out to be great, because we also freeze a ton of fruit when it's in season. Oh, and we make our own chicken stock because I developed a carrot allergy five minutes ago. I think maybe I over-roasted it because the meat was honestly a little bland and a hell of a lot tougher than store bought, but shit, I made a stock with the carcass and it ended up being the best chicken & rice soup of my life. Amazing how much more flavor you get in a stock vs a store bought bird. I need to get some more of those little bastards. My buddy's father is a retired butcher and he gets this stuff from a local hog farm in Ohio that is exactly like that. Every time he comes and visits my friend I buy a significant amount of the bacon he brings down with him. It cooks up almost like bacon steak, it's hard to describe.
