Word these things are great. Doesn't sound like it applies to you but check local code if any of them are going in a concealed wall, some areas don't allow it.

I guess with these you just cut the existing pipe and insert both ends into the fitting? No need for soldering?

Why?
I have and I've seen plumbers use them. They're fine. I wouldnt plumb a whole house with them but for a repair they're great.

Our fridge water is run up through the floor and is tapped to a random cold water supply line. No sharkbite though.

Yeah the supply side to the water heater looks like a fairly common place to pull from. From what I read people say do not use a saddle fitting because they leak. Looking at them, that looks like a pretty stupid way to go so will not be doing that.

my only concern with sharkbites involve the rubber gasket wearing out over time (especially with hot water lines that change temperature more frequently). Solder doesn't have this problem. Proper plumbers use solder. I've had plumbers use sharkbite fittings before and i don't use their services anymore. For a quick DIY i think it's fine, but i'd monitor them and note where they are in the house for you to check occasionally.
our fridge line is connected to the cold water line going to our hot water heater. check codes regarding how you can hook it up, but it seems with the hot water heater right below your fridge it seems that you can run a line down.

Ours is a regular cut and solder job to add a t-junction. I definitely don't recommend a saddle fitting.
Note that sharkbites are banned in a few states due to lead laws. I, personally, wouldn't want it my drinking water supply. YMMV.

Copper tee to short run of copper pipe to this although I'd try to find one that has quarter turn on off cause these stupid ones can be finnicky when you turn them on and off. They drip sometimes

That to you're braided line up through floor unless you want to put filter downstairs too then just get another short section of braided line to put filter down there and run long section up through floor.
Not sure any of that will pass code but I don't know that anything will unless you run to a wall box which would be the "right" way to do it.
That's the easiest way if you want to sweat the fitting but don't want to mess around with more fittings than you have to and have the ease of a small flexible line to deal with the the majority of the route

Yes! That looks like what I was dreaming up in my head. I didn't know the name of that type of fitting so I couldn't find what I was looking for.
I'm not really worried about coding issues for now. That's a future Jon problem.

Since this thread has turned into a combination of my house/incoming baby/Accord talk I figured I would post about the Accord's Adaptive Cruise Control. We have this in Emily's CRV but it's clunky and doesn't work that well. It brakes way too early when it senses another car even on the closest follow setting. Having this feature in my Accord I figured I would never use it.
Decided to try it out in traffic earlier this week. Wow. Set the speed for 35-40mph and the closest follow setting and it accelerates and brakes pretty well. Keeps up with traffic while leaving about a car to a car and half length in front of you. It's not as smooth as a human can be with the gas and brake, but it's not bad at all. Technology is a hell of a thing.

the cr-v has it, but i find it a little annoying. It never fails that it will leave a large enough gap for some dude going 5 under speed limit to get in front of you. 10 minutes later you realize how slow youre going. I wish the gap was smaller

What year CRV? My wife's 2016 CRV has it and it is much less refined than what is in my car. The gap is huge. This leaves about a car length. I have had 1 or 2 people sneak in though.
